Birthday Food

My husband had this amazing gluten free, vegan cake made for my birthday.

So good.
So sweet.
Both my husband and the cake……

Seriously, I honestly can’t remember the last time I had cake, so it was a great surprise…and did I mention it was so good?!

I definitely won’t be doing that again anytime soon, but hey it was my birthday, gotta live a little.

And lucky for me, or them, we had friends over to help eat it.

We also had one of my favourite go to meals, burrito bowls which I love!! 

Easy to make and so good.
And because it’s been a while since I’ve shared a recipe, here you go.

Hansi’s Burrito Bowls

2 Tble coconut oil
1 small onion, chopped
3 gloves garlic, chopped

Saute for 3-4 minutes and then add

2 Tble 9 spice mix (see below)
1/4-1/3 cup pureed tomatoes
same amount water
1 can drained/rinsed black beans

Stir until heated through and then add

2 cups white basmati rice, cooked

Mix thoroughly and add salt if needed, or more 9 spice mix.

Serve with chopped tomatoes, cucumber, avocado, shredded lettuce, etc.

9-Spice Mix-“Oh She Glows Everyday”-Angela Liddon
1 Tble sweet paprika
1 Tble garlic powder
1 Tble dried, minced onion
21/4 teas sea salt (I use Redmond Real Salt)
11/2 teas. ground black pepper
11/2 teas. dried oregano
3/4 teas. ground tumeric
3/4 teas. dried thyme
3/4 teas. smoked paprika
Combine in a small jar, shake to combine.
