Wedding, hiking and home hummus

Several years ago I gave away a perfectly good food processor.

I never used it. It was cumbersome to use and to clean. To be honest, I wasn’t even sure what to use it for as most times, I used my blender.

A couple years later, after my Canadian Tire blender broke, I bought a VitaMix, the holy grail of blenders among health nuts, and seriously, I loved it.

Then, thanks to my daughters generosity, Angela Liddon’s Oh She Glows cookbooks came into my life. Now you know these are two of my favourite cookbooks, all plant based, super easy to make and super yummy!

Many of the recipes require a food processor, so within a few months I bought a new one, and there’s been no turning back. Definitely works better then the VitaMix for “creamy” pasta sauces, muffin tops, energy balls……and hummus.

As I’ve said before, I’m not saying that everyone needs to go 100% plant based, but everyone can benefit from having more plant based options in their meal planning.

So here’s my slightly tweaked version of Every Day Lemon-Garlic Hummus from Oh She Glows Every Day:

Mince 1 clove of garlic, small-medium, in the food processor.
Then add
1 can chickpeas, 19 ounces, drained and rinsed
3 Tble lemon juice
1 Tble tahini (sesame butter)
3-4 Tble olive or avocado oil, more if needed
3/4-1 teas redmonds real salt, to taste
1/4 teas freshly ground pepper

Process until smooth, stopping occasionally to scrape down the processor bowl. Add more olive/avocado oil if needed to make it the consistency you prefer. Spoon into a container with lid and refrigerate for several hours or overnight to allow the flavours to mingle.
Serve with crackers, raw veggies or corn chips. Also a great addition to a budda bowl, roasted veggies, falafel salad, etc. Easy to add to a meal or build a meal or snack around.

In our house this recipe has been referred to as wedding, hiking and home hummus, totally confusing my husband who thought the reference was to three different types of hummus as opposed to the occasions we’ve made it for.

Definitely a family favourite….and in case you’re wondering, I still love my VitaMix but the food processor has also earned a spot in my kitchen when it comes to making and cooking healthy, nutrient dense meals!
