What do I eat

Maybe a strange question but considering I tell most of my clients to stop eating wheat, sugar, dairy, corn and soy, asking what I eat seems understandable.

I’m not overly fond of labels but to make things easier I say I’m gluten free/vegan. I’m really more of a pescaterian because I do eat a bit of fish. Like a condiment once or twice a week, that’s it. Seriously who even knows what a pescatarian is…first time I heard the reference I had to look it up!

My “diet” is mainly plant based and has evolved to that over the years.
I didn’t wake up one morning thinking I’m no longer going to eat animals.
I just stopped eating beef and pork, then eggs, then turkey and chicken.
Although I haven’t consumed milk for years and years, cheese was really the last of the dairy to go.
My thesis writing year was all about Breyers Mint Chocolate Chip ice-cream. The Fall after I defended (2011), was when that changed…no ice cream since until this past Summer when my daughter introduced me to vegan ice cream.

It is a thing, and it is yummy!!!

So if you’ve been wondering what I eat, I eat a lot of this…it’s quick, easy and so good!!!

Oh She Glow’s 8 minute Pantry Dal

1 heaping Tble coconut oil
4 c diced veggies (use whatever you have)
1/2 c red lentils
1/2 c water
1 (14 oz) can diced tomatoes
1 (14 oz) can coconut milk
1 1/2 teas garlic powder
1 1/2 teas minced onion
1 Tble good curry powder
3/4-1 teas salt (I use Redmonds Real Salt), to taste
Freshly ground pepper, to taste

Melt the oil in a large pot over low-med heat. Add the veggies and stir to combine. Add in the rest of ingredients, stir, increase heat and bring to a low boil. Cook uncovered on low heat until veggies are tender (about 20 minutes depending on the veggies used). Stir frequently while cooking to prevent sticking.

Serve over rice, top with a squeeze of lime juice and or cilantro.
